I will share any kudos with you for that thread. Chili powder is usually a mix of ground cayenne, garlic, cumin and often oregano. These are the basic spices needed I would think. And I was misleading in my recipe – chili needs to cook slowly for a good while - an hour is a rush job on a tight schedule – make extra as it tastes better the next day.

I've been making chili powder in a spice grinder lately with good results. Freshness I can't get from bought, but the good chili powders do have a depth to them I haven't been able to get. I haven't added smoked paprika yet, usually just a couple of Anchos and chipotles with some garlic powder and mexican oregano... great to rub on anything to throw on the grill...perhaps the next food thread should be a grilling extraveganza...
